Texas Daily Photo: Prause Meat Market In LaGrange

Down in LaGrange Texas sits one of the finest barbecue houses in the great state of Texas. Established in the 1890s this is where we go to get bone in beef brisket, pluperfect Texas hot guts sausages and custom cut steaks, butchered while you wait.

Pit boss Monroe Schubert has been setting fire to post oak and converting hunks of raw meat into delicious Texas barbecue since the 1960s. In a modern world where these men are fetishized Schubert exhibits a wry modesty that we find very becoming.

While it’s true that I rarely eat non-meat when at barbecue,  special note must be made of one of Prause’s 3 potato salads; ask for the one with sour cream and bacon. In a world where side dishes at even the best Texas barbecue houses are mainly an afterthought this dish really stands out.

If you’re lucky you’ll find countergirl Kathy in a feisty mood. She was holding court on one visit we paid and had the assembled crowd dying with laughter as she related an anecdote about coming across a snake at a local swimming hole.

This gal is a Texas treasure.
