Blown away.
We ran down to Swift’s Attic during their soft opening week thinking we should get in before the crowds figured out that chefs Clouser and Northcutt have some pretty diabolical plans for the Austin restaurant hierarchy.
As in; they’re planning on being kings of the mountain around these parts. Pictured is an antelope kebab that brought out our primal side. The Broken Arrow Ranch venison was beyond tender. Staring at it for a moment when it made it to the table caused shards of pink, succulent flesh to free form fall in ribbons of bloody deliciousness.
Whoever cooked it also amped up the salt as the flesh seared on the fire.
This is very important.
Red meat, hot flames, plentiful salt. Throw in a glass of bourbon and we’ll go ahead and call it a night.
