Any food sleuths out there? I’ve got a hot tip for you but you’re going to have to work for it. Pictured, a roaringĀ fire upon which several animal heads were left over-night. This is a clear circumvention of the laws of Texas for commercial sale of barbacoa.
It is also an excruciatingly delicious way to prepare the dish.
I’m not giving up the details on this food trailer. It’s in east Austin, the barbecue pit is fairly near the trailer and the cart serves goat, mutton and cow head tacos. It is unreal. I discovered this little joint while doing research for “Austin, Texas Barbacoa Trail” an app for iphone and android that’s coming out in the next month or so.
Happy hunting.
