In October of 1983 this old building on St Bernard swung its doors open as Vaucresson Sausage Company continuing a long tradition of the Vaucresson family’s selling of charcuterie to the New Orleans public.
Katrina changed all that-sending a six foot wave of water through the building destroying the grinders and extruders and ruining all the supplies used to make the company’s signature sausages.
I love the outsider art festooning the exterior walls of this old building and the beating heart of the old sausage company is practically palpable as you stand outside the structure.
