While it’s unfortunately true that Li’l Dizzy’s does not make stock from scratch as a building block for their gumbo, they somehow still manage to put out one of the finest bowls in the city.
If I don’t have time to make stock then I reckon I don’t have time to make gumbo but I had the necessity of scratch stock for soup hammered into me by my early mentors and have never looked back.
Li’l Dizzy’s gumbo is rife with hunks of good sausage, pork shoulder and city ham. All that meat (and a tiny bit of seafood) combine to make a really fine stock-free soup. A bowl runs around ten bucks, comes with plenty French bread and butter and will fill up all but the most recalcitrant of dockhands.
