There’s a good 7 people in the taco wagon at La Canaria on this beautiful Sunday morning.; a middle aged lady, a teenage girl, a middle age man and a host of young’uns-all laughing and having a good time in the tiny space that is surely their home away from home.
This must be one happy family I inwardly reckon.
I’ve eaten at La Canaria countless times and other than one bad meal from a taquera never seen again, have always been amply pleased.
Today is no different. My taco arrives as a plump little packet in a brown paper bag. The corn tortilla is what all lovers of the form dream of when we’re drifting off at night. Thin, perfectly pressed and rich with the flavor of maize.
A green salsa has a close working relationship with tomatillas and chile. It’s loose and delicious, perfectly complimenting the lightly mixed, scrambled eggs and crispy bacon. My ordered cheese is mysteriously missing but having had this taco a multitude of times I know it to be typically of good quality and plentiful. An occasional negligence can be overlooked when all other components are of this heavy caliber.
At a dollar seventy five the price is veering dangerously close to $2 but when the quality is this high I could really give a fig.
Taquera Maria is working in the rarefied air of the upper echelon of skilled Mexican chefs in Austin. A category that is sadly small in our fair city.
