Texas Daily Photo: Bigham’s Smokehouse In Lubbock Texas [est. 1978]

I had a lot of eating to do in a short period of time in Lubbock, Texas recently. Bigham’s Smokehouse is one of the local barbecue joints that gets a lot of mention when you’re in research mode so it was the first of my stops.

Unimpressed. The brisket was somewhat tough with little smoke flavor and no seasonings. The pork ribs were measurably better but still not upper echelon barbecue.

Sausage is brought in so I opted out during ordering.

Circled out back to take a picture of the pit and it was some fancy contraption with all sorts of electronics hitched to it.
