When business carried me down to the Bouldin Creek neighborhood a while back I had to stop in at John Mueller Barbecue for a minute to grab some take away barbecue for the fridge at the house.
The cantankerous pit boss Mueller was in the middle of a pork steak project; seasoning the mammoth steaks to prepare them for the smoker.
These behemoths supplanted the bone in pork chops that vanished from the menu, much to local eater’s chagrin.
Smoked pork steaks are not common barbecue around these parts but as you make your way into the pork belt of Alabama they’re fairly commonplace.
I can’t wait to get back down there and actually sample one of the beasts.
