I smoked a family pack of turkey necks over Hickory for a few hours last weekend. I needed some collagen heavy meat so I could have a master-stock to draw down on over the course of the week.
Late last week I scored a loaf of Bellegarde bread and never got a chance to eat it before it went stale. For the record that’s less than 24 hours; Bellegarde really needs to put some preservatives in their bread so a body can enjoy it for longer.
No matter. What with all my smoked turkey stock, stale bread, and neck meat I’ve got all the fixin’s to make a nice batch of Turkey Neck Dressing.
